Casting call -- hired...now what?

Hello,
Some time ago, I responded to a casting call that did not specify payment. We've negotiated a price and he's ready to hire. However, I want the specified payment listed (of course) and I want to break a huge project into small bits. Is this possible? How do we set it up? I am very afraid of being burned on this, so I want to ensure that I'm following everything CC outlines.
