Everyone loves the tradition of a Thanksgiving bird and very few celebrate the holiday without it. Yet people still often yearn to try something new without going too far outside the bounds of tradition. This just may be where grilling a turkey for Thanksgiving can bend the ritual without breaking the rule!

Getting Started
As you"re well aware, Thanksgiving is one of those holidays that can require a lot of pre-planning and there are several things you"re going to want to have done before you head for the grill.

First of all, you"ll want no more than a 12 pound bird. A 12 pound bird will take approximately 2+ hours to cook using this method. Unless you know a way to keep coals consistently hot for that long of time, you"ll need a propane grill for this job.

Check to see if your barbecue is equipped with a place to hold a pan for the turkey drippings. If not, a small aluminum pan placed on the bottom of the grill should do the trick.

Purchase a meat thermometer to check your turkey"s temp periodically while cooking; and if your grill is not equipped with one, an oven thermometer so you can keep a consistent grill temperature.

Have plenty of oven mitts or something to help you "flip the bird". If you"re not careful, your bird will dry out while grilling. To keep your bird moist and tender, you"ll want to rotate it once every 40-45 minutes.

Be safe. Have your bird defrosting in your fridge for at least 3 days before cooking. Leaving your bird "out" to defrost increases your chance for salmonella poisoning. Avoid making stuffing in the cavity of your bird for the same reason. (Besides, the great thing about grilling this year will be that it frees up your oven for not just making stuffing but for all kinds of fantastic tasty side dishes!)
