All About a Brew... Wonderful Wit Beer

The undisputed gu-ru of Belgian wheat beer is Pierre Celis, who brought the style of beer back from near extinction. In 1965, yearning for the wit beers that penetrated his youth, Celis founded the now famous Hoegaarden Brewery. Celis" business success, and personality are legendary in the beer world.

Wit distinguishes itself from other wheat varieties by being made from raw rather than malted wheat. Wit beers are most accurately described as light to medium yellow and cloudy in color, having low levels of hops, and offering a subtle spice or citrus essence. If you are afraid of flavor, move along… wit isn"t for you. Often, even the novice beer drinker can discern wit"s hallmarks: bitter orange peel and coriander. Most brewers are anxious to let their creativity shine by adding to these hallmarks and concocting a beer that, when consumed slowly and deliberately, will undoubtedly impress you. Wit beer should be presented with a strong white head. Most wit beers are 5% alcohol by volume, making them all too easy to enjoy. For best results, wit beer should be served at about 50 F. Often, those who might not otherwise enjoy traditional "American" beers, will fall head over heals for wit. Hats off to Celis.

Many beer enthusiasts associate wit beer with the summer season due to its crisp, smooth, refreshing flavor. Sadly, some brewpubs and breweries limit their production to the spring and summer seasons. But make no mistake, this is undeniably a beer that can, and should, be enjoyed year-round. Wit beer is best complimented by lightly flavored foods, such as fish, chicken, or salad which allow the nuances of wit beer to be truly appreciated.
